Finger Food Desserts
for a Romantic Picnic
When it comes to finger food desserts a fruit platter is one of the
easiest and tastiest . Cut any fruit you like into mouthful size pieces. Include grapes, watermelon, honeydew melon, peaches, apricots (fresh or dried), dates,nuts or cheeses.
Some
fruit is more likely to discolour than others. Apples, pears and
bananas are notorious for this. If you want to use these fruits in your
platter soak them in lemon juice first. This helps to preserve their
colour.
Make up your fruit platter in a plastic dish with a lid to take so it is easy to carry.

Strawberries Dipped in Chocolate
One of the easiest finger food desserts to make and so romantic to eat. - 1 punnet of strawberries
- 125gms dark or milk chocolate
- P1 packet of wooden skewers or toothpicks

- Skewer strawberries at the stalk end with wooden skewers.
- Dip ends of
strawberries in chocolate.
- Lay them on baking paper
and refrigerate to set.
- Pack them into plastic containers to take on the
picnic.
What could be easier Threading the strawberries on a skewer makes them so much easier to dip and to eat.

Rum Balls with Orange
- 50g pitted prunes, roughly chopped
- 40ml rum
- 125g dark chocolate
- 65g butter, chopped
- 125g scotch finger biscuits
- 40g roasted hazelnuts
- 1 orange, zested
- 25g flaked almonds, finely chopped

Heat prunes and rum in a small saucepan and bring to the boil. Remove from heat. Set aside to cool. Melt chocolate and butter in a bowl, over a pan of simmering water. Stir until melted. Chop the biscuits, hazelnuts and prunes finely and add to the chocolate mix with the orange zest. Refrigerate
until firm enough to shape. Line
a tray with baking paper. Place almonds in a shallow bowl. Roll the mixture into balls. Coat each ball with chopped almonds place on
the tray. Makes about 20 balls

Almond and Mascarpone Stuffed Dates
- 20 whole dates
- 20 whole smoked almonds
- 250 g mascarpone cheese
|
Cut a slit into each date. Carefully remove the stone. Use a teaspoon and a blunt knife to fill each date with mascarpone. Push the almonds on to the top of the mascarpone A delicious snack to end a meal.
